Hertzoggies are very traditional 'Afrikaanse tertjies'. A shortcrust pasty filled with apricot jam topped with coconut meringue. Great to fill the cookie tins for holiday season! Just don't expect them to last too long. Normally my short crust pastry is too much for the topping so I added a second topping for left over crust. (see 'Accompanying Recipes'). They also make perfect gifts or could be packaged and sold from your home industry (tuisnywerheid).
A beautiful creamy cheescake that needs no baking. For that special celebration... But be not concerned that you need to be very skilled, this recipe is very easy. Just start it well in advance to allow everything to set well.
